How to make Jollof Ofada Rice

Before we continue, If you haven’t read the post on the importance of adding Ofada rice to your food timetable. Here is it Ofada rice and sauce

Ofada Rice is a good choice if you’re trying to eat more healthy and here is the Jollof version. Eating healthy is not boring its actually fun.

Lets get right into the recipe 



  • 2 cups of ofada rice
  • 3 tbsp vegetable oil
  • 2 tbsp tomato paste
  • 1 big onion(½ diced, ½ sliced)
  • 1 tbsp blended crayfish
  • Thyme, curry, ½ teaspoon each
  • Seasoning cube
  • Blended pepper mix (3tomatoes, 1 atarodo, 1 bell pepper)
  • Salt to taste
  • 3 cups of water
  • 1 fresh large tomato
  • Sheet of foil


  • Pick dirt from the ofada rice
  • Wash well because of its dirtiness
  • Parboil the rice for about 20 minutes
  • Pour the parboiled rice into a sieve and set aside
  • Place a pot on medium heat
  • Add oil and heat up for 2 minutes
  • Put the chopped onion and fry a bit
  • Add the tomato paste and pepper mix, fry for about 2 minutes
  • Pour a little bit of water to avoid burning
  • crayfish, curry, thyme salt and seasoning cube should be added at this point
  • Add more water then leave to boil for about 5 minutes
  • Pour in the parboiled rice on a low heat
  • Cover the pot with foil paper and the lid{The pot should be well covered for the rice to be infused with the flavour}
  • Leave to cook for about 20 minutes
  • Add fresh tomatoes and sliced onion, stir and remove from heat

If the rice isn’t done to your own desire(the texture) add more water and cook for about 10 minutes.
